Spaghetti alla Carbonara are maybe the most iconic Italian pasta dish in the World. They were born in Rome, Italy's Capital, in a small, very characteristic trattoria romana, in 1944. Apparently, the Carbonara recipe was inspired by US troops based in Rome combined with the creativity of a Roman cook. The result of that was the Carbonara: eggs, bacon (later become guanciale), and cheese (pecorino romano). Today the dish is much appreciated nearly everywhere in the World, but even more so in Rome, where making the perfect Carbonara is a never achievable objective, with neverending adjustments, proportions, and ingredients' quality. Everybody proudly claims to be the ultimate maker of the perfect Carbonara, but that victory is nearly ephemeral as the next "touch" will improve the recipe (eg, with ground black pepper, with just yolks, with pancetta, etc.).
