Tagliatelle alla Bolognese is one the most delicious plates of food in Italy. The sauce, called ragù, is cooked long and slow, for hours up to 5 or even 6 in many cases. That's not uncommon at all. It is a very rich and satisfying comfort food, well known worldwide, and is generally prepared for the Sunday family lunch and for very important celebrations. The recipe can vary from town to town, village to village and even family to family, but the basics are always the same: a base (called soffritto) made by sautéing finely chopped onion, carrot, and celery together, then ground beef and pork are added with tomato sauce and cream (optional). The result is a thick and very flavorsome meat sauce ready to be stirred through rigorously egg tagliatelle. The dish is very well worth it, trust us on that!
